It’s going to be so hot this week that the airlines have told travelers they can reschedule their flights without change fees (considering the last time it was this hot, the airport had to shut down)! Seriously! But, I’ve heard from family and friends around the country that they’re really hot, too. Not close-the-airport-hot, but hot.
This salad is delicious and perfect for a quick-to-fix summer meal.
Sometimes it’s hard to consider a salad for a meal. Not because salads aren’t filling, but because sometimes I just don’t have it in me to get creative. That’s when I fall into a rut of the same old, same old.
Smoked salmon salad with blueberries and lemon poppy seed dressing is anything but boring. The smoky salmon with the spicy onion and the sweet blueberries make a flavorful combination. Toss in some crunchy pistachios and top it off with a fabulous dressing, and you’re got a delicious and filling meal.

Ingredients
- Half a large bunch Romaine lettuce
- 3-4 oz (85-113 g) smoked salmon
- 0.5 red onion
- 0.3 cups (71 ml) fresh blueberries
- 0.25 cups (59 ml) pistachios
- Lemon wedges
- Lemon Poppy Seed Dressing
Instructions
- Make the dressing.
- Transfer the lettuce to a platter.
- Scatter the salmon, red onion, blueberries, and pistachios over the top of the lettuce.
- Drizzle with the dressing and serve immediately.

- For best flavor, use high-quality smoked salmon with a good texture.
- If fresh blueberries aren’t in season, frozen blueberries can be used (thawed and gently patted dry).
