Skillet Fruit Cobbler

Description

Serve this cobbler, which is cooked in a cast iron skilled, warm with vanilla ice cream.


Ingredients

Scale
  • 1 stick of unsalted butter
  • 1 cup of all purpose flour
  • 1 cup of sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of vanilla
  • a pinch of salt
  • 3 small peaches
  • 1.5 cups of blackberries or blueberries

Instructions

  1. Preheat the oven to 350 degrees. Grease the cast iron skillet.
  2. Melt the butter in a small pan or microwave.
  3. In a large bowl combine butter with sugar, flour, vanilla, salt, and baking powder. Add this mixture to the skillet.
  4. Peel the peaches, remove the pits and slice them.
  5. Place them atop the batter in the skillet. Then add in the berries.
  6. Bake for 55 minutes, or until the crust begins to brown and pull away from the sides of the skillet.
