Scale
- 2 cups Heavy Cream (480 ml)
- 1 cup Whole Milk (240 ml)
- 6 Egg Yolks
- 1 1/2 cups Sugar (300 ml)
- 1/4 - 1/2 cup Genmaicha (to taste) (60-120 ml)
- 1 tsp Vanilla Extract (5 ml)
Instructions
- In a medium saucepan, combine the heavy cream and whole milk. Heat over low heat until warm, but not boiling.
- While the cream and milk are heating, whisk together the egg yolks and sugar in a large bowl until the mixture is light and pale in color.
- Once the cream and milk mixture is warm, slowly pour a small amount into the egg yolk mixture, whisking constantly to temper the eggs and prevent them from scrambling.
- Gradually add the rest of the cream and milk mixture to the egg yolks, continuing to whisk until fully combined.
- Return the mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon, until the mixture thickens enough to coat the back of the spoon, about 8-10 minutes.
- Remove from heat and stir in the Genmaicha and vanilla extract until well combined.
- Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight to chill completely.
- Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the ice cream to an airtight container and freeze for at least 2 hours or until firm before serving.
Notes
- Genmaicha is a blend of green tea and toasted brown rice, which adds a unique flavor to the ice cream.
- If you can’t find Genmaicha, you can substitute with matcha powder, but the flavor will be different.
- Store the ice cream in an airtight container in the freezer for up to 2 weeks.
- Serve as a refreshing end to a meal or a unique treat on a warm day.
