Have you gotten on board the overnight oats train yet? It might be time you did. I find the best time of day for me to eat healthily is first thing in the morning. In fact, I’m best at doing just about everything in the morning. By dinner time, I am dragging. So when I wake up I set out to have a healthy and productive day.

What better way to start a healthy and productive day than with some Apple Pie Overnight Oats? When I call them “Apple Pie,” you think you are getting away with something, right?

Not so! These are full of so much goodness and you won’t even know.

Apple Pie Overnight Oats

Let’s take those gluten free oats. Oats are full of fiber and antioxidants and can even lower your cholesterol when eaten regularly. They are high in resistant starch which is known to increase satiety and decrease insulin levels.

Chia seeds contain fiber, protein, Omega 3 and Omega 6 fatty acids. They have a very mild flavor and you won’t even know they are there!

These Apple Pie Overnight Oats are so simple to make. Just add equal parts gluten free oats to liquid. You can use coconut, almond or regular milk. Some folks like to add in yogurt too. It’s the perfect blank slate for you to experiment with different flavors.

ADD-INS FOR OVERNIGHT OATS

flaxseeds
chia seeds
fresh fruit
dried fruit
nuts
almond, peanut or cashew butter
PB8 powder
cocoa powder
cocoa nibs
chocolate chips
honey
maple syrup
agave nectar
molasses
brown sugar
vanilla or almond flavoring

See? The possibilities are endless.

Sometimes I set up an assembly line and make a few days worth of overnight oats on Sunday. Those are the weeks when I feel healthy and just plain on it! Try it. There’s power in a healthy breakfast!

Ingredients

Scale
  • 1 cup gluten free oats
  • 1 cup refrigerated coconut milk (or almond)
  • 1 tbsp maple syrup
  • 2 tsp chia seeds (optional)
  • 3 tbsp chopped apples
  • cinnamon (optional)

Instructions

  1. Mix all ingredients except for 1 tbsp of chopped apple in a small jar.
  2. Refrigerate overnight.
  3. Garnish with 1 tbsp chopped apple, more maple syrup and a sprinkle of cinnamon. (optional)
