Watercress, Mango, and Mint Summer Rolls with Ginger-Sesame Sauce

Summer rolls and sushi are a couple things that I love ordering out, but don’t really think to make at home very often. Actually, I’ve never even tried my hand at homemade sushi, but this is my second time making summer rolls, and I had forgotten just how easy and fun they are to whip up.

What I love most about summer rolls is that they’re light and refreshing and full of bright flavors, basically like eating a salad wrapped in rice paper. And let’s not forget the flavorful dipping sauce because that’s what’ll keep you coming back for a second and possibly even a third roll.

Shrimp is a pretty common addition, but I kept mine plant-based by using a variety of vegetables, herbs, and mango for a touch of sweetness to balance out the peppery bite of watercress (which is incredibly nutrient-dense and an excellent source of vitamin A, C and K!). Watercress is a pretty versatile leafy green and can be added to smoothies, soups, and sandwiches; it’s also a great addition to fresh summer rolls.
