Ingredients

Soup

  • 3 1/3 cups (800 ml) Greek yoghurt
  • 4 ripe avocados
  • 2 1/4 oz (65g) fresh baby spinach
  • 4 chopped spring onions (adjust to taste preference)
  • 1 tsp coriander (adjust to taste preference)
  • 1 2/3 cups (400 ml) mineral water
  • Salt and pepper, to taste

Cheese Crisps:

  • 1 cup (100g) grated Västerbottensost

Instructions

Soup

  1. Cut the avocados in half, remove the stone and cut into small pieces. Blend all the ingredients in a jug and mix to a smooth soup using a hand blender. Adjust spring onions, coriander, salt and pepper to taste.

Cheese Crisps

  1. Lay the cheese on a piece of baking paper and bake in 225 C (435F )oven for about 5 minutes or until the cheese takes on a golden color. Leave to cool and break into pieces. Serve alongside soup.
