Frequently Asked Questions
What is Västerbottensost and where can I buy it?
Västerbottensost is Sweden’s most famous cheese — a hard, aged cheese with a unique savory, slightly sharp flavor. The article notes A.V. Olsson Trading distributes it in the US; look for it at Scandinavian specialty shops or well-stocked cheese counters. If unavailable, a sharp aged Parmesan produces similar crispy cheese wafers.
How do I make the cheese crisps without burning them?
Lay 1 cup (100g) of grated Västerbottensost flat on baking paper and bake at a very high 225°C (435°F) for about 5 minutes, watching closely until the cheese turns golden. Pull them as soon as they color — they crisp up further as they cool on the paper.
Is this soup served warm or cold?
It is a cool soup — the recipe title and the article both describe it as a “warm weather” first course, blended from chilled Greek yogurt, raw avocado, baby spinach, and mineral water with no cooking involved.
