Mason jar recipes have become our saving grace for packed lunches. Why not breakfast too? We love a good parfait, but sometimes we need something a bit more filling and much less sweet. A sugar rush in the morning is not always the goal.

For these savory parfaits, you start with a layer of cheesy grits, then top them with greens that have been sauteed with garlic, then scrambled eggs, and all the toppings you want. We love layering these jars with avocado, plain yogurt and tomatoes. Whatever order you go in, just be sure the crispy bacon crumbles are on top! That way they stay crunchy. If you’re assembling these the night before, leave the bacon off until the morning.

To fuel our day, we like having a breakfast that is loaded with fiber, protein, and healthy fats. This jar has just that and will help keep your brain functioning in tip-top shape as you take on all you have to do in a day. (Hangry minds are a real thing!)
