PB&J Greek Yogurt Parfait

This PB&J parfait transforms one of my favorites – a peanut butter & jam sandwich – into a parfait that triples as a hearty breakfast, healthy snack and wholesome dessert.   The options for pb&j combos are endless with different fruit and granola toppings.  Some of my favorites are: almond butter with raspberry jam, peanut butter with banana and honey, and peanut butter with raspberry jam.  I like to use homemade freezer jam and then top the parfait with blueberries, sliced banana, granola and any other fruit or berries.

These homemade parfaits are a great way to doctor your Greek yogurt yourself, controlling the amount of sugar and additives and getting creative with the fruit combos.  And a bonus is that it’s cheaper to buy a tub of plain non-fat or low-fat Greek yogurt and make many parfaits out of it than to buy individual flavored Greek yogurts.  If you don’t have freezer jam on hand, any berry puree will do.

Description

Transform a classic peanut butter and jam sandwich into a delicious PB&J Greek Yogurt Parfait, perfect for breakfast, a snack, or dessert.


Ingredients

Units Scale
  • 1 cup non-fat or low-fat plain Greek yogurt
  • 1 tablespoon almond or peanut butter
  • 2 tablespoons homemade freezer jam or berry puree
  • 1 banana, sliced
  • 1/4 cup blueberries
  • 1/4 cup granola (optional)

Instructions

  1. Scoop 1/2 cup of plain Greek yogurt into a serving bowl.
  2. Add 1/2 tablespoon of almond or peanut butter on top of the yogurt.
  3. Drizzle 1 tablespoon of homemade freezer jam or berry puree over the peanut butter.
  4. Repeat the layers with the remaining yogurt, almond or peanut butter, and jam.
  5. Top the parfait with sliced bananas, blueberries, and granola if using.
  6. Serve immediately and enjoy.

Notes

Feel free to experiment with different nut butters and jams for varied flavors. Homemade freezer jam adds a fresh touch, but any berry puree works well. This parfait is a cost-effective alternative to store-bought flavored yogurts. Store any leftover ingredients separately and assemble just before serving to keep the parfait fresh.
