Guacamole Burgers with Roasted Sweet Potatoes

They say the only thing that doesn’t change is the change itself. Though sometimes I find it hard to keep up, the latest change in our life has been a welcome one. On the last day of 2016, my husband accepted a position in a beautiful resort in Manchester Village, Vermont, which meant that for the next couple of months – we focused on quick weeknight meals, and trying not to complicate our cooking too much.

It takes about 30 minutes to make this recipe. I would recommend starting with roasting the potatoes and the onion as it is what takes the longest. While that is happening, you can make the guacamole and then cook the patties. It is that simple and easy to make. I have never paired roasted sweet potatoes with a burger before, but now after eating these I think it is a favorite combination in our house now.

Ingredients

  • 1 sweet potato (237 g) sweet potato
  • 0.5 red onion (119 g) red onion
  • 2 tbsp olive oil (30 ml) olive oil
  • salt and pepper

  • 1 ripe avocado (237 g) ripe avocado
  • 1 jalapeno pepper (237 g) jalapeno pepper
  • 1 lime (113 g) lime
  • salt and pepper
  • 10 ounces (283 g) ground beef
  • salt and pepper
  • 1 tbsp (15 ml) olive (or vegetable oil)
  • 2 sesame seed buns sesame seed buns

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Place sweet potato and red onion slices on a sheet pan.
  3. Drizzle with olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper.
  4. Toss to coat and bake 16-18 minutes, or until tender when pierced with a fork.
  5. Remove from oven and set aside.
  6. Mix together red onion, avocado, jalapeno pepper, and 1 tablespoon lime juice in a bowl.
  7. Stir in ¼ teaspoon salt and a pinch of black pepper.
  8. Taste and add more lime juice and seasoning if needed.
  9. Place ground beef in a bowl.
  10. Season with ¼ teaspoon salt and ¼ teaspoon black pepper.
  11. Mix and divide into two equal pieces.
  12. Form into two ½-inch thick patties.
  13. Heat 1 tablespoon oil in a non-stick skillet over medium heat.
  14. Add patties and cook 2-4 minutes per side, or until browned and cooked through.
  15. Place on a plate and cover loosely with aluminum foil to keep warm.
  16. Add buns, cut sides down, to the skillet.
  17. Add a tablespoon of oil to the buns if needed.
  18. Toast for 1-2 minutes, or until lightly browned.
  19. Place bottom buns on a plate and top with cooked patties and guacamole.
  20. Complete the burgers with the top buns.
  21. Serve burgers with roasted sweet potatoes and onions, and lime wedges on the side.

Notes

  • For extra flavor, roast the sweet potatoes and onions with a sprig of rosemary or thyme.
  • If you don’t have sesame seed buns, substitute any type of bun you prefer.
  • Leftover guacamole can be stored in an airtight container in the refrigerator for up to 2 days.
