Description

Baked eggs with toast is one of my favorite weekend breakfasts; it’s easy, always effortless and so quick to make.

Ingredients

Units Scale
  • 4 eggs
  • Couple handful of fresh spinach, roughly chopped
  • 1 medium onion, thinly sliced
  • 1 garlic cloves, grated
  • 1 tsp chili flakes
  • 1 tbsp dried oregano ( or any other herb of your choice)
  • 1/2 cup (60 g) grated pepper jack cheese( or any other of your choice)
  • 1/2 cup (120 ml) heavy cream
  • salt
  • pepper
  • oil

Instructions

  1. Preheat the oven to 375F
  2. In a pan heat some oil and sauté the garlic with onion until it’s translucent. Season with salt and pepper
  3. Add the spinach and cook for about two minutes.
  4. Pour the cooked onion and spinach in two individual oven safe containers.
  5. Add little bit of cheese on top followed by little bit of chili flakes and dried oregano
  6. Now, very carefully crack two eggs in each of the container ( or one, depending on how small or big your oven save container is)
  7. Next, pour the heavy cream, add the remaining cheese and add some freshly cracked peppers top.
  8. Baked it for about 20 minutes or until the egg is cooked.
  9. Serve immediately with some toasted bread.

Notes

  • Please note the cooking time will differ from oven to oven.
  • My husband likes well-cooked eggs but if you prefer medium cooked eggs, yours should be done by 15 minutes.

Frequently Asked Questions

How do I know when the baked eggs are done?

Cooking time varies by oven, so check at 15 minutes for medium-cooked yolks and at 20 minutes for well-cooked eggs. The notes specifically mention that 15 minutes gives a medium set while 20 minutes yields fully cooked yolks.

Can I use a different cheese instead of pepper jack?

Yes — the recipe lists “or any other of your choice” alongside the 1/2 cup pepper jack. A milder cheddar or gruyère works well if you prefer less heat from the jalapeño base of the pepper jack.

Why does the recipe use heavy cream instead of milk?

The 1/2 cup of heavy cream is poured over the eggs before baking to keep the whites silky and prevent them from turning rubbery in the oven. It also melds with the melted pepper jack to create a rich, cohesive sauce around the spinach and onion base.
