Frequently Asked Questions

What type of white beans work best for this salad?

I call for 1 cup (240 ml) of drained white beans without specifying a variety. Cannellini or great northern beans both work well — their creamy texture holds up when tossed with the olive oil, lemon juice, white vinegar, and garlic dressing.

Does the dried mint need any special preparation before adding it?

No — just sprinkle 1/2 tsp of dried mint directly over the assembled salad at the end. The moisture from the dressing and the seasoned onion is enough to release its flavour.
