This recipe comes from Chef Richard Sandoval, an acclaimed culinary created with a whole host of restarants to his name. Growning up in Mexico City, Chef’s family would drink Ponche Navideño during Las Posadas, the 9-day celebration leading up to Christmas. But it’s perfect for all of winter! You can find this cocktail being served at his Washington DC (Both of the El Centro D.F. locations and Toro Toro.) and New York City restaurants (At Maya.) now.
1 RED APPLE – PEELED, CORED & SLICED
1/2 MANGO – PEELED & DICED 1/4 CUP CRANBERRIES
1 CUP PINEAPPLE, DICED
4/5 TBSP. BROWN SUGAR
6 1/2 TBSP. SUGAR
3 CUPS WATER
6OZ BLANCO TEQUILA
1 CINNAMON STICK, GARNISH 1 STAR ANISE, WHOLE GARNISH
Peel, then slice apple, mango and pineapple. Combine all ingredients except tequila, cinnamon stick and star anise in a large pot. Simmer over medium heat for 45 minutes and reduce down to about 12-14oz. Allow mixture to cool and mix in the tequila. Refrigerate and serve over ice. Garnish with cinnamon stick and star anise. Serving size – 6oz
