Description

This vibrant Mixed Fruits Jelly combines fresh orange juice, green kiwifruit puree, and dragon fruit for a refreshing and colorful dessert.

Ingredients

Units Scale
  • 300g Orange juice
  • 30g Sugar (or add to taste)
  • 1 1/4 tsp Agar agar powder
  • 220g Green kiwifruit puree (from 2 pcs kiwifruit)
  • 100g Water
  • 1 Dragon fruit, diced

Instructions

  1. In a saucepan, combine 300g of orange juice, 30g of sugar, and 1 1/4 tsp of agar agar powder. Heat over medium heat, stirring continuously until the mixture comes to a boil. Once boiling, remove from heat and continue stirring for another minute. Strain the mixture through a fine sieve to remove any lumps.
  2. In a separate saucepan, combine 220g of green kiwifruit puree, 100g of water, 30g of sugar, and 1 1/4 tsp of agar agar powder. Heat over medium heat, stirring continuously until the mixture comes to a boil. Once boiling, remove from heat and continue stirring for another minute.
  3. Pour the orange juice mixture into a mold and allow it to set slightly. Then, carefully pour the kiwifruit mixture on top, followed by the diced dragon fruit. Allow the jelly to set completely in the refrigerator for at least 2 hours before serving.

Notes

  • For a sweeter jelly, adjust the sugar to your taste.
  • Ensure the agar agar is fully dissolved to avoid lumps.

Frequently Asked Questions

What is agar agar powder and why is it used here instead of gelatin?

Agar agar is a plant-based setting agent made from seaweed, commonly used in Asian desserts. This recipe uses 1¼ tsp per layer (once for the orange juice mixture, once for the kiwi mixture), and unlike gelatin it sets at room temperature and produces a firmer, cleaner cut — which is what keeps the two colored layers distinct.

How do I keep the two layers from mixing when I pour them?

The instructions say to pour the orange juice mixture into the mold first and let it set slightly before carefully pouring the kiwifruit mixture on top. Waiting for partial setting is the key step — pouring onto a still-liquid layer would blend the two colors together.

How long can I store the finished jelly?

The notes say the jelly can be stored in the refrigerator for up to 3 days. Serve it chilled straight from the fridge for the best taste and texture.
