A healthier twist on a Danish favorite. Served with cauliflower rice and topped with apples and almonds.

Meatballs in a curry sauce… doesn’t sound very Nordic does it? Nevertheless it is one of the most famous recipes in Denmark and it’s a dish that most Danish families make once in a while or in some cases even every week.
It’s also a dish that I really, really like and also loved as a kid. The original curry sauce is made as a roux sauce mixed together with milk, flour and butter but I’ve tried to make it a bit healthier by using organic coconut milk instead. I think it tastes even better than the original sauce recipe and I always make it like this.
Normally we would serve the meatballs with rice, as do most Danish families, however, I like to substitute the rice with an even healthier alternative, that is cauliflower rice. If you haven’t heard of cauliflower rice, it’s quite simple. It’s basically just raw cauliflower that has been blended into a rice like texture and it goes great with these meatballs with coconut curry sauce. A low carb version of a traditional Danish classic that is so good!

Ingredients
- 14 oz. (400 gr.) organic ground pork
- 1 egg
- 1 onion, grated
- ¼ cup (1/2 dl.) milk
- ¼ cup (1/2 dl.) rolled oats
- 1 tsp. salt
- freshly ground pepper
- 1 onion, finely chopped
- butter
- 2 tbsp. curry
- 1 tsp. sugar
- 1 tsp. salt
- 1 can of organic coconut milk
- 1 apple
- Toasted almonds
- Extra pieces of apple
- Sprouts
Instructions
- In a large bowl, combine pork, egg, grated onion , milk and oatmeal and salt and freshly ground pepper (to taste).
- Hint: it is a good idea to mix the meatball mixture with your clean hands as it will incorporate it better; remember to remove all jewellery first.
- Shape the mixture into small meatballs and cook them in a pot of lightly salted water until they are ready and fully cooked. Drain and set meatballs aside.
- Sauté onion in butter until golden, add curry. Add the coconut milk and season with salt and sugar. Add small pieces of apple and meatballs and heat through. Serve with toasted almonds, sprouts and extra pieces of apple.
