Irish Sweet Potato Nachos

The perfect night-in food, sweet potato nachos combine scallions, bacon, and sour cream to sit atop thin, crispy potato chips.

How to Make Irish Sweet Potato Nachos:


Step1

Thinly slice sweet potatoes with a mandolin (about chip thickness)


Step 2

Arrange the chips onto a greased baking sheet.

Bake the chips at 400 F for 10-15 minutes or until crisp looking.


Step 5

Remove chips from baking sheet onto wire rack for cooling.


Step 6

Fry bacon strips in non-stick frying pan. Place bacon onto paper towel to absorb excess fat. Chop it up with a knife into tiny bite size pieces.


Step 7

Top with grated cheddar and bacon bits. Put back into the oven for 2-3 minutes until the cheese has melted.


Step 8

Top again, this time with sour cream, sliced spring/green onions. Serve

  • 1 stem green onion
  • 2 slices bacon

Instructions

  1. Thinly slice sweet potatoes into chip-like thickness.
  2. Arrange the sweet potato chips on a greased baking sheet.
  3. Spray the sweet potato chips with olive oil.
  4. Bake the chips at 400°F (204°C) for 10-15 minutes, or until browned and crisp.
  5. Remove the chips from the baking sheet and place them on a wire rack to cool.
  6. Fry bacon strips in a non-stick frying pan until cooked.
  7. Place the cooked bacon on paper towels to absorb excess fat.
  8. Chop the bacon into small pieces.
  9. Top with sour cream, sliced green onions, grated cheddar cheese, and bacon bits.
