Description

Crispy sweet potato chips piled high with savory bacon, creamy sour cream, and sharp cheddar. The perfect easy weeknight dinner.


Ingredients

  • 2 sweet potatoes (454 g) sweet potatoes
  • 1/4 cup sour cream
  • 1 stem green onion
  • 2 slices bacon
  • 1/4 cup freshly grated aged cheddar cheese

Instructions

  1. Thinly slice sweet potatoes into chip-like thickness.
  2. Arrange the sweet potato chips on a greased baking sheet.
  3. Spray the sweet potato chips with olive oil.
  4. Bake the chips at 400°F (204°C) for 10-15 minutes, or until browned and crisp.
  5. Remove the chips from the baking sheet and place them on a wire rack to cool.
  6. Fry bacon strips in a non-stick frying pan until cooked.
  7. Place the cooked bacon on paper towels to absorb excess fat.
  8. Chop the bacon into small pieces.
  9. Top with sour cream, sliced green onions, grated cheddar cheese, and bacon bits.

Notes

  • For extra crispy sweet potato chips, soak the sliced potatoes in cold water for 30 minutes before baking to remove excess starch.
  • If you don’t have fresh green onions, you can substitute 1 tablespoon of dried chives.
  • Store leftover sweet potato chips separately from the toppings in an airtight container for up to 3 days. Reheat chips gently before serving.
