- 2 sweet potatoes (454 g) sweet potatoes
- 1/4 cup sour cream
- 1 stem green onion
- 2 slices bacon
- 1/4 cup freshly grated aged cheddar cheese
Instructions
- Thinly slice sweet potatoes into chip-like thickness.
- Arrange the sweet potato chips on a greased baking sheet.
- Spray the sweet potato chips with olive oil.
- Bake the chips at 400°F (204°C) for 10-15 minutes, or until browned and crisp.
- Remove the chips from the baking sheet and place them on a wire rack to cool.
- Fry bacon strips in a non-stick frying pan until cooked.
- Place the cooked bacon on paper towels to absorb excess fat.
- Chop the bacon into small pieces.
- Top with sour cream, sliced green onions, grated cheddar cheese, and bacon bits.
Notes
- For extra crispy sweet potato chips, soak the sliced potatoes in cold water for 30 minutes before baking to remove excess starch.
- If you don’t have fresh green onions, you can substitute 1 tablespoon of dried chives.
- Store leftover sweet potato chips separately from the toppings in an airtight container for up to 3 days. Reheat chips gently before serving.
