Description

Leftover roti gets a delicious upgrade! Quick, flavorful grilled wraps perfect for lunch.


Ingredients

  • 8 roti (fresh or leftover)
  • 1 cucumber (sliced)
  • 2 tomatoes (sliced)
  • 1 onion (sliced)
  • 1/4 cup tomato ketchup
  • 1/4 cup cheddar cheese
  • Salt
  • Pepper
  • 2 tsp olive oil

Instructions

  1. Heat a panini press or grill pan and drizzle with olive oil.
  2. Apply ketchup to flatbreads and arrange vegetable slices.
  3. Sprinkle with salt, pepper, and cheese, then fold the bread in half.
  4. Place the flatbread on the preheated panini press and cook according to the manufacturer’s instructions.
  5. Remove from the press, slice, and serve.

Notes

  • For best results, use leftover roti that’s slightly dry; this will prevent soggy wraps.
  • Feel free to add other vegetables like bell peppers or shredded carrots for extra flavor and nutrients.
