Grilled Romaine and Blue Brie Salad

Grilled romaine topped with melting Saga blue brie, sliced nectarines, and crispy crumbled bacon. The cheese melts into the warm leaves. Served immediately.

Blue brie on hot grilled romaine is a combination most people would not try on their own. They should. The heat wilts the lettuce just enough to soften it, and the cheese melts into the warm leaves in pools of creamy blue. Add crispy bacon crumbles and sliced nectarines and you have a salad that tastes like it came from a restaurant.

Two romaine hearts, brushed with olive oil, grilled until slightly charred. The blue brie goes on immediately after grilling so it starts to melt. The nectarines go on cold. The temperature contrast between warm cheese and cold fruit is half the appeal. One of my favorite things we make in summer, honestly.


Tips for Making Grilled Romaine with Blue Brie

Grill the romaine quickly

Two romaine hearts, halved lengthwise, brushed with olive oil. Medium-high heat, two minutes per side. You want char marks and wilted outer leaves but a crisp centre.

Do not overcook. Fully wilted romaine is limp and sad. The grill is a quick kiss of heat, not a long cook.

Add the cheese while the romaine is hot

Cut the blue brie into chunks and place them on the grilled romaine immediately after removing from the grill. The residual heat softens the cheese.

Saga blue brie is creamier and milder than other blue cheeses. If using a stronger blue, use less.

  4. Remove from the grill and top with chunks of blue brie cheese, allowing it to melt slightly.
  5. Add sliced nectarines and crumbled bacon on top.
  6. Serve immediately while the cheese is still warm.
