These Gluten Free Treasure Chests are one of those treats that get stuck into your mind because they are linked to a cool memory. And, unlike usual, this is not one of my recipes, but a courtesy of my mom, the wizard behind the Italian blog www.pentolefornelli.blogspot.it

I just got back to Italy after a few months in the US. I was jet legged and resting on the couch in her kitchen, enjoying the breeze coming in from the window after a refreshing summer storm.

A delicious smell wakes me. On the table, there’s her dark oak rolling pin and the rustic wooden board my dad built for her when they got married. Always the same for the last 40 years. So many pies and handmade pastas were rolled over it… you can’t even imagine.

As I get off the couch, I see her leaning towards the oven, taking out a tray of delicious treats she baked just for me. “Nienteglutine, zucchero nélatticini” she says, reassuring me she didn’t use any sugar, gluten, nor dairy in my custom made pastries.

I am stoked. “Bellissimi!” I scream excited for how beautiful they are. She tells me that inside she hid a dollop of the apricot jam she just made last week using the fruit from our tree. No sugar in that either.

While they cool down, we think about a name. Since they shield such a precious filling inside, the name “treasure chests” seems like a perfect match.

A drizzle of 100% dark chocolate later, it’s finally time to try them. Epic!
The whole family loves them, but they leave them all to me.
Mom made another batch with regular flour for the rest of the crew.

Description

These Gluten Free Jam Hand Pies, also known as ‘Treasure Chests’, are delightful pastries filled with sugar-free apricot jam and encased in a simple gluten-free crust, perfect for a sweet treat without the guilt.


Ingredients

Units Scale
  • 300 g Gluten Free Flour Mix (e.g., Schar)
  • 60 g melted Coconut Oil
  • 3 free-range Egg Yolks
  • 60 g Lemon Juice
  • 60 g Dates, pitted and smashed
  • 1 pinch of Stevia
  • Grated Zest of 1/2 Lemon
  • 100 g Apricot Jam (sugar-free)
  • 30 g 100% Dark Chocolate, melted (optional for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the gluten-free flour mix, egg yolks, melted coconut oil, lemon juice, and lemon zest. Mix well until the ingredients start to bind together.
  3. Add the stevia and smashed dates to the mixture. Knead the dough until it becomes smooth and all ingredients are well incorporated.
  4. Roll out the dough on a lightly floured surface to about 1/8 inch thickness.
  5. Cut the dough into circles using a cookie cutter or a glass.
  6. Place a small dollop of apricot jam in the center of half of the circles.
  7. Cover each jam-topped circle with another circle of dough, pressing the edges together to seal.
  8. Place the hand pies on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  10. Allow the pies to cool on a wire rack. If desired, drizzle with melted dark chocolate before serving.

Notes

For a sugar-free option, ensure the apricot jam is made without added sugar. These pies can be stored in an airtight container for up to 3 days. The dough can be made ahead and refrigerated for up to 24 hours. If you prefer, substitute the apricot jam with your favorite sugar-free jam.
