Countdown to Summer: Fried Okra and Shallots with Cilantro

Delicious in gumbo and soups, try the summer vegetable coated in cornmeal and fried for a nice crunch. Full of nutrients, it was even the preferred vegetables for the athletes of the Beijing Olympic Games.
