Coconut Delight Bars

Homemade coconut bars are easy to make at home, succulent and creamy coconut filling coated with chocolate.

I have been making these bounty bars for sometime now, as my son just loves them. The original bars are very costly in this part of the world, so I started making them at home. It might take anywhere between 40 to 50 seconds to mix the coconut filling and a few min to roll them into bars and dip them in melted chocolate. (no baking required, just melt the chocolate)

Description

Creamy coconut filling coated in rich chocolate. A simple treat for coconut lovers!


Ingredients

Units
  • 2 cups (473 ml) Dessicated Coconut
  • 1 cups (237 ml) Sugar
  • 1 tsp Cornflour
  • 1/3 of the tin Condensed Milk
  • 150-200 gm (5-7 oz) Bitter Sweet Chocolate
  • 50 gm (2 oz) Dalda

Instructions

  1. Add the sugar to a blender, add cornflour, and grind to a fine powder.
  2. In another bowl, add 2 cups of desiccated coconut.
  3. Add the powdered sugar and 1/3 of the condensed milk and mix with your hand until a soft, pliable dough forms.
  4. Line a cookie sheet with parchment paper.
  5. Pinch off pieces of the coconut filling, roll into logs, and place them on the parchment paper (or make into small balls).
  6. Refrigerate for 15 minutes, or until chilled and slightly hardened.
  7. Meanwhile, grate the chocolate bar.
  8. Melt the chocolate in a double boiler, adding dalda, Crisco, or another shortening.
  9. Dip each chilled coconut bar in the melted chocolate until completely covered and place them on another sheet of parchment paper to harden.
  10. Refrigerate for 15-20 minutes.
  11. Optionally, double dip the bars after the first chocolate layer hardens for extra chocolate coverage.

Notes

  • For a smoother filling, pulse the desiccated coconut briefly in a food processor before mixing.
  • If you don’t have condensed milk, you can substitute with an equal amount of sweetened coconut cream.
  • Store the finished bars in an airtight container in the refrigerator for up to a week.

Do I need to toast the coconut before adding it to the bars?

Toasting is optional, but it adds a nuttier, deeper coconut flavor. If you toast it, let it cool completely before mixing it in so it does not affect the texture of the other ingredients.

How firm should the bars be before I cut them?

These bars aren’t actually cut — they’re rolled into logs and dipped in chocolate. The shaped logs need about 15 minutes in the fridge until firm before dipping, and the dipped bars need another 15 to 20 minutes to fully set. Handling them while still soft will cause them to lose their shape.

Can I substitute desiccated coconut for shredded coconut?

Yes, though desiccated coconut is finer and drier, so the bars may be slightly denser. The flavor will still be good, just a different texture.
