I’ll be the first one to admit…I’ve never been good about breakfast.
Weekend brunches YES!! (I’m pro level, in fact), but if we’re talking about a easy healthy weekday-in-a-hurry morning meals that are more than a cappuccino…well that is where I fall flat. In fact, lately I’m realizing that I’m not fueling myself enough to even make it to lunch which brings on a cranky crazy hunger that’s starting to creep upon me earlier and earlier due said breakfast-issues. Yikes….time to resolve that.
I know smoothies are nothing new, but it’s something that’s never been in my own regimen. Why!? I know. It’s the perfect way to get everything you need to make it through the first part of your day, easily and probably waaayyyyy less than my local coffee shop run. So I decided to give a go…and the results are feeling (and looking) pretty fabulous.
Inspired by one of my favorite things (outside of food obvi) plants – I decided to turn this new morning ritual into something a little extra special by dressing up this smoothie action up like a terrarium.

- Yield: 2 servings 1x
Ingredients
- 1 cup DREAM Boosted Coconut
- 2 cups baby spinach
- 1 banana
- 1 apple
- 1/2 english cucumber
- 1 kiwi
- 1 cup frozen blueberries
- 1 dragon fruit
- 1/3 cup fresh blueberries
- toasted coconut flakes
- chia seeds
- goji berries
Instructions
- In a blender add 1/2 cup DREAM, 1/2 banana, 1/2 apple, spinach, cucumber, kiwi and pulse until smooth. Dive into two glasses. In a clean blender add 1/2 cup DREAM and frozen blueberries, pulse until smooth. Pour directly over green smoothie to create separate color layer.
- Top with slices of dragon fruit, fresh blueberries, chia seeds, goji berries and coconut flakes!
