A simple, beautiful salad can make a cold day feel bright. Roast winter tomatoes to give them great flavor and serve with prosciutto and pecorino cheese.

A simple salad can be beautiful and delicious and still be very easy. This salad is soo yum!! When winter tomatoes have less flavor, throw them in the oven. First, I roasted a handful of cherry tomatoes and a garlic clove. Cut the cherry tomatoes in halves, add a pinch of salt and pepper, drizzle some extra virgin olive oil on top, and bake at 300 degrees for about 15-20 mins. To assemble the salad, mix the roasted cherry tomatoes with some fresh ones, add slices of prosciutto and pecorino cheese. Again, season with salt, pepper, and some olive oil. That’s it!!
- 1/2 Cup cherry tomatoes, roasted
- 1/4 Cup fresh cherry tomatoes, optional
- Prosciutto
- Shaved pecorino cheese
- salt, to taste
- pepper, to taste
- olive oil, to taste
- Preheat oven to 300F.
