Frequently Asked Questions

Do I need to use fresh mangoes or will canned mango work?

Fresh ripe mangoes give you the best flavor and natural sweetness. Canned mango pulp (like Alphonso) is a solid alternative when fresh mangoes are out of season. Just drain any extra syrup first.

How does cottage cheese work in a mousse?

Blending the cottage cheese until completely smooth creates a light, protein-rich base that replaces heavier cream. You should not taste the cottage cheese once it is blended with the mango. Just make sure there are no lumps left.

How long does the mousse need to set in the fridge?

Chill it for at least 2 to 3 hours, or overnight for the best texture. The mousse firms up as it cools, giving you clean slices or scoops when you serve it.
