Description

This is really a basic granola recipe. Nothing too fancy. Nothing too “scary” for the kids. Just 3 main ingredients and some flavor.


Ingredients

  • 5 cups (1.2 L) rolled oats
  • 1 package sliced almonds (about 8 oz / 225 g)
  • 1 cup (240 ml) coconut flakes
  • 1 tbsp (15 ml) cinnamon
  • 1/4 tsp salt
  • 1/2 cup (120 ml) honey
  • 1/4 cup (60 ml) canola oil
  • 2 tbsp (30 ml) vanilla
  • Add cranberries after cooking, if desired...

Instructions

  1. In a small bowl (or large liquid measuring cup) combine honey, oil and vanilla. Set aside.
  2. In a large mixing bowl combine oats, almonds, coconut, cinnamon and salt. Stir to combine.
  3. Pour honey mixture over oats and stir until well combined and the honey is evenly distributed.
  4. Pour onto 2 lined baking sheets.
  5. Bake at 250 degrees for 1 hour and 15 minutes… stirring the granola every 15 minutes or so to evenly toast the mixture.
  6. When finished, immediately transfer to a bowl to cool (the granola will stick to your baking sheet if left to cool on the baking sheet.)
  7. Enjoy!

  • Feel free to add dried cranberries or other dried fruit to the granola AFTER it has been cooked.

The low-and-slow method — 250°F for 1 hour and 15 minutes, stirring every 15 minutes — toasts the oats, almonds, and coconut evenly without scorching. Higher temperatures burn the honey coating before the inside of the oats can dry out and crisp up.

Why do I need to transfer the granola to a bowl immediately after baking?

The recipe specifically warns to transfer the granola immediately to a bowl as soon as it comes out of the oven — if left on the baking sheet to cool, the honey in the granola will stick it firmly to the sheet and you’ll lose a lot of it.

When should I add cranberries or other dried fruit?

The notes are clear on this: add dried cranberries or any dried fruit AFTER the granola has finished baking and cooled. Adding them during baking will dry them out further and can cause them to burn.
