Description
A quick and healthy stir fry featuring tender chicken, sweet potatoes, and nutrient-rich kale, seasoned with curry and turmeric for a flavorful one-pot meal.
Ingredients
- 2 cups (480 ml) cubed skinless boneless chicken
- 1 cup (240 ml) cubed cooked peeled sweet potato yam
- 10 stalks of chopped Lacinato kale
- 1 1/2-2 tbsp Sadaf curry powder
- 1/8 tsp turmeric powder
- 3 tbsp oil
- Salt to taste
Instructions
- Heat 3 tbsp of oil in a large pan over medium heat.
- Add the cubed chicken and a pinch of salt. Stir well, cover, and cook for about 8-10 minutes until the chicken is fully cooked and no longer pink inside.
- Sprinkle turmeric powder and curry powder over the chicken. Stir to coat the chicken evenly with the spices.
- Add the cubed sweet potato yam to the pan. Stir to blend well with the chicken and spices. Cook for another 3-5 minutes until the sweet potatoes are heated through.
- Add the chopped kale to the pan. Stir well and cook for an additional 2-3 minutes until the kale is wilted and tender.
- Taste and adjust the seasoning with more salt if needed. Serve hot.
Notes
- For a vegetarian version, substitute chicken with tofu.
- This dish can be served on its own or as a side.
