Description

A quick and healthy stir fry featuring tender chicken, sweet potatoes, and nutrient-rich kale, seasoned with curry and turmeric for a flavorful one-pot meal.


Ingredients

Units Scale
  • 2 cups cubed skinless boneless chicken
  • 1 cup cubed cooked peeled sweet potato yam
  • 10 stalks of chopped Lacinato kale
  • 1 1/2-2 tbsp Sadaf curry powder
  • 1/8 tsp turmeric powder
  • 3 tbsp oil
  • Salt to taste

Instructions

  1. Heat 3 tablespoons of oil in a large pan over medium heat.
  2. Add the cubed chicken and a pinch of salt. Stir well, cover, and cook for about 8-10 minutes until the chicken is fully cooked and no longer pink inside.
  3. Sprinkle turmeric powder and curry powder over the chicken. Stir to coat the chicken evenly with the spices.
  4. Add the cubed sweet potato yam to the pan. Stir to blend well with the chicken and spices. Cook for another 3-5 minutes until the sweet potatoes are heated through.
  5. Add the chopped kale to the pan. Stir well and cook for an additional 2-3 minutes until the kale is wilted and tender.
  6. Taste and adjust the seasoning with more salt if needed. Serve hot.

Notes

For a vegetarian version, substitute chicken with tofu. This dish can be served on its own or as a side. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently before serving.
