Ingredients

Dry Ingredients

  • 1 cup almond flour
  • 1/3 cup tapioca flour
  • 2 tbsp coconut flour
  • 1 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup apple sauce
  • 3 eggs
  • 1/2 cup date paste
  • 1 apple (chopped)

Topping

  • 1 tsp ghee
  • 1/2 cup pecans or walnuts (crushed)
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the dry ingredients.
  3. In a separate bowl, combine the wet ingredients until smooth.
  4. Add the dry ingredients to the wet ingredients and stir until well combined.
  5. Stir in the chopped apple.
  6. Portion the batter into a greased muffin tin or use paper baking cups, filling each cup about 3/4 of the way up.
  7. In a small bowl, combine the ghee, pecans or walnuts, and cinnamon for the topping. Sprinkle a bit of the topping on top of each muffin.
  8. Bake for 20-23 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool before serving. Enjoy!
