The Kingi Family’s New Year’s Eve Coffee Cake

“Here is my mom’s coffee cake recipe. We make it every year on New Year’s Eve. I had to watch her do it though because her instructions aren’t that great and I ruined it the first time I tried it, lol! But, after watching her and doing it with her, I got it down, it’s soooo good!

The Kingi Family’s Coffee Cake

Ingredients

Scale
  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 2 cups sifted flour
  • 1 tbsp baking powder
  • Few grains of salt (1/8 tsp or less)
  • 1 tsp vanilla (but I always add more lol)
  • 1/2 cup milk

Instructions

In A Large Mixing Bowl

  1. Cream the margarine (mash it out with a fork until creamy)
  2. Add sugar and cream well (mix it in well with the margarine)
  3. Ad well beaten eggs

In A Small Or Medium Size Mixing Bowl

  1. Mix and sift dry ingredients
  2. Add vanilla and mix in the batter
  3. Spray tube pan with Pam. Then pour 1/3 cake mixture into the tube pan.
  4. Sprinkle 1/2 of streusel filing over top
  5. Pour in the remaining cake mixture
  6. Sprinkle the remaining cake mixture
  7. Bake at 350 degrees oven for about 30 min
  8. (Check with toothpick to see if it is done. Toothpick should NOT come out doughy)
  9. But do not over bake. Baking time depends on the size of the baking pan.
  10. Keep an eye on the cake.

Ingredients For Streusel Filling

  1. Combine the ingredients in order given!
  2. 3/4 cup brown sugar
  3. 3 tsp cinnamon (I add more, because I love cinnamon)
  4. Few Dashes of nutmeg (optional)
  5. 1 1/2 cups of chopped walnuts (add more if you are nuts about nuts)
  6. 3 tbsp flour
  7. 3 tablespoon melted butter
