South India is flooded with Mangoes right now and the craving for more and more mangoes is never-ending at my place. So I need to ensure every time the mangoes are getting over in my pantry I need to buy and store more. I know this love for mangoes is quite common among many of us. I have been making many mango recipes at home out of which my mango ice cream is much in demand at home among my kids.
I am always too hooked to parfait, the main reason behind this is only one and that is because I love having fruits and what better way to have them with a twist. Recently I made this quick Mango and Yogurt Parfait for a quick breakfast, a delicious flavorΒ with mango puree, vanilla yogurt topped with granola and nuts. Try it to believe it.

Frequently Asked Questions
Why does the recipe have you chill the glasses in the freezer before layering?
Chilling the glasses for 5-7 minutes before assembling helps keep the mango puree and yogurt cold and firm so the layers stay distinct rather than sliding together. The notes specify serving the parfait cold but not ice-chilled, so this is a brief chill rather than a freeze.
Can I use plain yogurt instead of vanilla-flavored yogurt?
The recipe calls for 200 grams of vanilla-flavored yogurt specifically for the sweetness and flavor it adds alongside the mango puree. Plain yogurt would work but would give a tangier, less sweet result β the article notes the combination of mango puree and vanilla yogurt is key to the “delicious flavor” described.
Can I add other toppings besides granola and mango cubes?
Yes β the notes suggest adding dry fruits for a richer flavor and mention using any granola of your choice. Assorted nuts are listed as an optional topping in the ingredient list as well.
