Description

Tomato sauce out of the can is almost always kinda gross. Try this super simple recipe instead.

Ingredients

  • - 500ml of organic passata
  • - 1 clove of garlic
  • - 2 chipolte peppers, diced, in adobo sauce (two tbsp of the sauce as well)
  • - 1 small spanish onion, diced
  • - 1 tbsp of butter
  • - 1 heaped tsp of firmly packed brown sugar *optional*
  • - good quality balsamic vinegar

Instructions

  1. In a small saucepan saute the onion and garlic in butter and a good dash of olive oil until soft and translucent.
  2. Add passata, diced chipolte peppers, sugar and a good slurp of balsamic vinegar and simmer for 20-30minutes. Check for seasoning.
  3. Serve warm :)

Notes

  • If serving for children, don’t add the chipotle peppers and instead substitute 1/2 a teaspoon of smoked paprika, for that smokey, rich, spiced flavour.
  • Also, I like my sauce chunky, kind of like a relish, but you can blend it and pass it through a sieve making it super smooth.

Frequently Asked Questions

Can I make this kid-friendly?

Yes — the notes say to skip the chipotle peppers in adobo and substitute ½ tsp smoked paprika instead. You keep the smoky, rich flavor without any chili heat.

How do I control the final texture — chunky or smooth?

The notes explain that the author prefers a chunky, relish-like consistency straight from the pot after the 20–30 minute simmer. If you want a smooth sauce, blend the finished sauce and pass it through a sieve.
