With savory sausage and fruit, this maple breakfast cake is a fun treat that we love to enjoy on weekend mornings. Although, don’t feel like you have to wait until the weekend to bust out this recipe.

Enjoy a slice warm with a drizzle of maple syrup, a dollop of yogurt and more fresh berries. It’s heavenly! And what better way to entice the kids to get out of bed and get the day started than cake?!

It’s a pretty easy recipe too. Simply cook the sausage, then whisk together the dry ingredients in one bowl and the wets in another. Fold the two together and add in the sausage and berries and bake!

For this breakfast cake, we like to use Eggland’s Best eggs. They bring extra nutrients to the table, which is always a plus, especially at breakfast. Each Eggland’s Best egg is higher in omega-3 fatty acids, DHA, folate, lutein, and vitamins B, D, and E.  How? Their superior nutrition is thanks to the all-natural vegetarian feed their hens eat everyday. Not only are their eggs packed with nutrients, they also have less calories, fat, sodium, and cholesterol than ordinary eggs. Talk about a good breakfast option!

We love to enjoy this sweet and savory cake with an over easy fried egg on the side. It is perfect to dunk into the runny yolk!
