Hummus-Shuka Bowl

It’s officially fall and we want all of our favorite foods with a comforting, cozy, warm twist. Enter, the hummus-shuka bowl. A beautiful bowl of tomato and egg shakshuka served with hummus and pita. YUM.

Hummus bowls were one of our favorite things to devour this past summer. We’d dress them up with loads of crispy chickpeas, fresh greens and veggies, herb sauces, hard boiled eggs and more. It was a perfect cool and filling meal. Now that the temperatures are (quickly) dropping, we want the same thing, only cozier.

Enter, hummus-shuka. This hummus bowl is topped with a spoonful of warm tomato and egg shakshuka and served with pita bread and pickled eggs for some tangy. For this recipe, we used Eggland’s Best eggs really boost nutrition. Because even though we might be getting ready to hibernate, we still need to make sure we are fueled and nourished for all of the active and sedentary adventures of the fall season. (We’re thinking raking leaves, pumpkin and apple picking, hayrides, haunted houses AND snuggling on the couch with a PSL, fuzzy socks and a good flick.) Not only are these eggs of higher quality, which to us means superior taste, but they have 6 times more vitamin D than ordinary eggs more than double the omega-3’s too. We all know how busy this time of the year can be. All fun things, but still busy! The best thing about this recipe is how easy and quick it can be. Prep your pickled eggs and homemade hummus ahead of time or pick up some at the store and you’re halfway there. Before you can sit down to eat dinner, all you have to do is make your shakshuka and then dig in!

Be sure to make a bigger batch of the pickled eggs, if you can. They’re a great addition to charcuterie and cheese boards, salads, sandwiches and so much more.
