Gluten-Free Fudgy Avocado Brownies

A healthier, skinny gluten-free fudgy brownie recipe using avocado, coconut sugar, and gluten-free flour!

Avocado in brownies is less of a health trick and more of a texture trick. Keep it simple. Mashed ripe avocado replaces most of the fat and gives the crumb a dense, fudgy quality that butter alone doesn’t quite achieve. Coconut sugar keeps them gluten-free and adds a mild caramel note. Dark chocolate chips folded in at the end mean you get actual pockets of chocolate, not just cocoa flavor throughout. These cut cleanly and hold together well.

How to Make Gluten-Free Fudgy Avocado Brownies

Mash the avocado smooth

Lumps of avocado in the final brownie are noticeable in texture and color. Use a fork, then switch to a spatula to get it fully smooth before adding the other ingredients.

Don’t overbake

Pull them at the low end of the bake time. A toothpick should come out with a few moist crumbs, not completely clean. They firm up as they cool and overbaked avocado brownies dry out faster than regular ones.

Description

Decadent brownies get a healthy makeover with avocado and coconut sugar.
Gluten-free and surprisingly fudgy!

Ingredients

Units Scale
  • 1 ripe Haas avocado
  • 1/4 cups (59 ml) unsalted butter, melted
  • 1 egg
  • 1 1/2 cups (355 ml) coconut sugar
  • 2 tablespoons water
  • 2 teaspoons vanilla extract
  • 3/4 cups (177 ml) unsweetened cocoa powder
  • 1/2 teaspoon Kosher salt
  • 1/4 cups (59 ml) gluten-free flour
  • 1/3 cups (80 ml) dark chocolate chunks/chips

Instructions

  1. Preheat oven to 350°F (177°C).
  2. Line an 8×8″ baking pan with aluminum foil, leaving an overhang, and spray with nonstick cooking spray.
  3. In a large bowl, mash avocado until smooth. Add melted butter, egg, coconut sugar, water, and vanilla; stir well. Add cocoa powder and stir until smooth. Stir in flour and salt until just combined, then briefly incorporate dark chocolate chunks.
  4. Spread batter evenly in the prepared pan and bake for 35 minutes, until the top has set.
  5. Allow brownies to cool completely (about 1 hour) in the pan on a cooling rack.
  6. Lift brownies out of the pan using the foil overhangs. Remove foil and slice into 9 to 12 squares.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • If your avocado is not very ripe, add a teaspoon of olive oil to the batter for extra moisture.
  • Store brownies in an airtight container in the refrigerator for up to 5 days.

Frequently Asked Questions

Can I taste the avocado in these brownies?

No. Once combined with the cocoa powder, coconut sugar, and vanilla, the avocado flavor disappears completely. It only contributes moisture and richness to the texture.

What type of gluten-free flour works best here?

A basic 1:1 gluten-free baking blend works well. You only need a quarter cup, so the flour choice is less critical than in a full cake recipe. Avoid coconut flour, which absorbs too much liquid.

Why do the brownies need to cool completely before cutting?

The avocado and melted butter make the batter very moist when warm. Cooling lets the structure firm up so you get clean slices instead of a crumbly mess.
