ETON MESS

This summer fruit sundae evokes the halls of Britain’s prestigious private schools and can be created in the time it takes to say “high society”. Traditionally, Eton Mess is made of meringue, cream and strawberries, but you can mix it up any way you like and add other fruits as well as ice cream. As the name suggests – it doesn’t even have to be pretty! Get the recipe from The Kiwi Cook here.

CHOCOLATE RIPPLE CAKE

Thrill your guests with this ridiculously easy dessert – you can make the most basic version with literally two ingredients. The recipe – grab a packet of chocolate ripple biscuits and whip a bowl of cream. Sandwich the biscuits with cream until you have a long chocolaty log and then cover the whole thing with more whipped cream (hey – we never said this was good for you!). Refrigerate and wait overnight, or for as long as you can before you tuck in. You can also add cherry liqueur to your cream or garnish the finished product with some gorgeous fruit. Get the oh-so-simple recipe from Flatrock Food here.

PEACH MELBA

This proud Aussie tradition does require a little bit of stovetop time to get the sauce right but it’s totally worth it! The tangy raspberries mix perfectly with the sweetness of the peach and the cool ice cream to deliver a Mother’s Day dessert worth remembering. Get this recipe from SheKnows.
