Roasted Pumpkin and Cranberries with Goat Cheese

Description

Ingredients

Scale
  • 3 cups Pumpkin Cubed
  • 2 tbsp Olive Oil
  • 1 tbsp maple Syrup
  • Salt to taste
  • 1/4 cup Cranberries
  • 100 g French Fresh Goat Cheese Log

Instructions

  1. Pre heat the oven to 200 degree C.
  2. Line a baking tray with aluminium foil.
  3. Add pumpkin, olive oil, maple syrup and salt in a bowl and mix well.
  4. Line the pumpkin on the baking tray in a single layer.
  5. Sprinkle cranberries on top.
  6. Bake for 20-25 minutes.
  7. Transfer the pumpkin in the serving bowl.
  8. Scatter goat cheese on top.
  9. Serve warm.
