The Matuszak Family’s Chocolate Truffles

Description

The Matuszak family loves making sweets, and chocolate truffles are one of our favorites.

We especially enjoy making these as little gifts!


Ingredients

Scale
  • 1/2 lb good quality bittersweet chocolate
  • 1/2 lb good quality semisweet chocolate
  • 1 cup heavy cream
  • 1 tbsp prepared espresso or coffee
  • 1/2 tsp good quality vanilla extract
  • 1 tbsp Grand Marnier or other flavored liqueur, optional.

Instructions

  1. Place finely chopped chocolates or chocolate chips in a heatproof or glass mixing bowl. (I prefer using Valrhona or Guittard chocolate.) Heat the cream in a small saucepan until it just boils. Turn off the heat and allow the cream to sit for 20 seconds. Pour the cream through a fine-meshed sieve into the bowl of chocolate. With a wire whisk slowly stir the cream and chocolate together until the chocolate is completely melted. Whisk in coffee, vanilla, & Grand Marnier (or other flavored liqueur). Cover and refrigerate for 1 hour. 
  2. Using 2 teaspoons (I like using a 1.5-inch ice cream scoop), scoop round dollops of the chocolate ganache onto a baking sheet lined with parchment paper. Refrigerate for 30 minutes until firm. Roll each dollop in your hands to roughly make a round ball. Then roll the chocolate truffles in cocoa powder, toasted chopped nuts, or crushed peppermint. These will keep refrigerated for a few weeks.
