Frequently Asked Questions
What does dulce de leche do in this recipe, and can I substitute it?
The 1/2 cup (120 ml) of dulce de leche binds the crushed shortbread, rice cereal, and rum into a mixture the recipe describes as “both crumbly and sticky.” It also contributes deep caramel sweetness alongside the 3/4 cup (90 g) of powdered sugar. The recipe doesn’t suggest a substitute, so a thick caramel sauce reduced to a similar consistency would be the closest option.
Why does this recipe add crispy rice cereal to the mixture?
The 1/2 cup (15 g) of crispy rice cereal is stirred in last after the rum is already incorporated. It adds a light crunch to the interior of each ball, contrasting with the soft shortbread and fudgy dulce de leche base.
