These individually-sized cakes cook in the microwave in under two minutes for nearly instant gratification of a sweet and seasonal craving.


Ingredients

  • 1 large egg
  • 1/4 cup (60 ml) pumpkin puree
  • 2 tbsp (30 ml) milk
  • 1/4 tsp vanilla extract
  • 1/4 cup (60 ml) packed brown sugar
  • 7 tbsp (1/4 cup plus 3 tbsp) (105 ml) self-rising flour
  • Pinch of kosher salt
  • 1/2 tsp pumpkin pie spice (or 1/8 tsp each ground cinnamon, nutmeg, ginger and a very tiny pinch of clove)
  • 3 tbsp (30 g) toasted pecans or walnuts, chopped, plus extra if you want to sprinkle on tops

Instructions

  1. In a large mug or small bowl, whisk together the egg and pumpkin puree with a fork.
  2. Stir in the milk,vanilla and sugar.
  3. Add the flour, salt and spices.
  4. Beat the batter until smooth.
  5. Stir in the nuts.
  6. Microwave the cakes separately for about 1&1/2 minutes, until risen and firm to the touch.
  7. Topping ideas: Whipped cream, caramel sauce, candied walnuts or dried cranberries.
