On a cozy night in there is nothing better than making a great grilled cheese sandwich. SIMI Winery’s Executive Chef Kolin Vazzoler’s, set out to find the perfect wine and grilled cheese pairing.

His sandwich warms you with its extra-cheese loaded formula and then SIMI’s Sauvignon Blanc cuts through the fat and cools things off while refreshing the palate. Go back and forth, a bite, then a sip and you’re sure to be in comfort food heaven. It’s as simple as that!

Description

Two cheeses are better than one! This gooey grilled cheese is the perfect pairing for a glass of SIMI Sauvignon Blanc.


Ingredients

Scale
  • 8 slices sourdough bread
  • 8 slices cheddar cheese (extra sharp)
  • 4 slices fontina cheese
  • 8 tbsp butter

Instructions

  1. Preheat broiler in oven.
  2. Melt butter in a non-stick pan over medium heat, add bread slices, and toast for 1 minute.
  3. Top each bread slice with 1 slice of cheddar cheese and continue toasting until the cheese is slightly melted, adjusting heat to prevent burning.
  4. Sandwich each pair of bread slices with the cheese in the middle and top with 1 slice of fontina cheese.
  5. Place under the broiler until the fontina is bubbly and slightly golden brown.
  6. Let rest for 30 seconds before serving.

Notes

  • For easier cheese melting, slightly overlap the cheddar slices on the bread.
  • To prevent burning, use a lower broiler setting and watch closely.
  • Leftover sandwiches can be stored, unwrapped, in the refrigerator for up to 2 days and reheated in a pan or toaster oven.
