Frequently Asked Questions

The recipe makes a large batch — how do I use all of it?

The roughly 2-cup base is designed to be split into thirds: one third used plain, one third becomes a Lemon Pecorino dressing by stirring in 1/3 cup grated Pecorino-Romano, and the final third becomes a Lemon Tahini dressing by whisking in 1 heaping tbsp tahini, 1 tsp honey, and a pinch of Aleppo pepper.

Can I make this without a blender?

Yes — the instructions specify you can either pulse all ingredients in a mini food processor or blender until emulsified, or simply whisk the dressing by hand.

Why champagne vinegar rather than a more common vinegar?

Champagne vinegar (1/3 cup / 80 ml) has a lighter, more delicate acidity than red or white wine vinegar, which lets the 1/3 cup / 80 ml of fresh lemon juice stay prominent without the dressing tasting harsh or overly sharp.
