Description

Individual plum cakes are simply to make and bring vibrant color and rich almond flavor to a fall table.


Ingredients

Scale
  • 1/2 cup sugar
  • 1/2 cup cake flour
  • 1/2 cup butter
  • 2 eggs
  • 1/3 cup almond flakes
  • tsp baking powder
  • 8 plums

Instructions

  1. Preheat the oven to 350°F and lightly grease your cake tin
  2. In a mixing bowl, cream together the butter and sugar until thoroughly mixed and it begins to look pale
  3. Beat in the eggs throughly
  4. Sieve the flour and baking powder together and fold into the mixture
  5. Cut the plums in half and remove the seed – then place half a plum in each mini cake space
  6. Spoon the cake mixture on top until each mini cake form is 2/3 full
  7. Sprinkle some almond flakes on top
  8. Bake in the oven for 15-20 minutes or until the cake is cooked through (check with a skewer)
