Miniature Plum Cakes

Description
Individual plum cakes are simply to make and bring vibrant color and rich almond flavor to a fall table.
Ingredients

- 1/2 cup sugar
- 1/2 cup cake flour
- 1/2 cup butter
- 2 eggs
- 1/3 cup almond flakes
- tsp baking powder
- 8 plums
Instructions
- Preheat the oven to 350°F and lightly grease your cake tin
- In a mixing bowl, cream together the butter and sugar until thoroughly mixed and it begins to look pale
- Beat in the eggs throughly
- Sieve the flour and baking powder together and fold into the mixture
- Cut the plums in half and remove the seed – then place half a plum in each mini cake space
- Spoon the cake mixture on top until each mini cake form is 2/3 full
- Sprinkle some almond flakes on top
- Bake in the oven for 15-20 minutes or until the cake is cooked through (check with a skewer)
