Raw mini peppers are one of my favorite healthy snacks. They’re so perfect dipped in hummus or guacamole. You can eat them whole, seeds and all, so munch away.

I decided to give these gorgeous sweet peppers a try, cooked, and this recipe for mini pepper pizzas did not disappoint. Not only was this fun finger food tasty, it was so easy to create. Sweet mini peppers are filled with pizza sauce, stuffed with mozzarella and topped with mini pepperoni, then broiled until the cheese is melted and bubbly.

Description

Pizza-flavored fun in mini sweet peppers! A healthy, vibrant appetizer perfect for parties or a snack.


Ingredients

  • 8 mini sweet peppers
  • 1/4 cup pizza sauce or marinara
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup mini pepperonis

Instructions

  1. Preheat broiler on high.
  2. Line a rimmed baking sheet with parchment paper or foil.
  3. Leaving the stems intact, cut the peppers in half lengthwise; remove the membranes and seeds.
  4. Place the pepper halves, cut side down, on the baking sheet, and spray cooking spray over the tops.
  5. Turn the peppers cut side up. Fill each pepper half with about 1/2 tablespoon of pizza sauce, about ½ tablespoon mozzarella and 2 to 3 mini pepperonis. Spray cooking spray over the top.
  6. Place 6 inches under the broiler flame (not directly under), and broil until cheese is browned, about 5 minutes.

Notes

  • For even cooking, arrange the pepper halves in a single layer on the baking sheet, ensuring they’re not overcrowded.
  • If you don’t have mini pepperonis, you can substitute thinly sliced pepperoni or cooked Italian sausage.
  • To make these ahead, assemble the peppers and store them covered in the refrigerator until ready to broil. Add a minute or two to the broiling time.
