Sweet Potato and Black Bean Burgers

Adding a meatless meal to your dinnertime is a healthy way to eat. These burgers are also economical as a dinner for 4 can be made for around 5 dollars.

The burgers take about 30 minutes to make. The vegetables are sautéed before they are added to the black beans. About half of the beans are kept whole while the remainder are mashed. This helps bind the burgers and gives them texture. After forming the burgers, a quick sauté in a hot pan adds a crispy browned crust and enhances their flavor. Served on whole wheat buns with a spicy yogurt sauce, thick slices of tomatoes and crisp lettuce, Sweet Potato and Black Bean Burgers will be a welcome addition to your dinner table. I suggest making a double or even triple batch as they freeze well and will make for a quick meal on a busy weeknight.

Budget-friendly and ready in under 30 minutes!

Ingredients

Units Scale
  • 2 tbsp + 2 tsp olive oil
  • 2 cups (473 ml) finely chopped mushrooms
  • 2 cups (473 ml) grated sweet potato
  • 2 cloves garlic, finely chopped
  • 2 scallions, thinly sliced
  • 1/2 tsp salt
  • 1 cup (237 ml) chopped baby spinach
  • 1 tsp cumin
  • 1/4 tsp cayenne
  • 1 (15-ounce) can (425 g) black beans, drained and rinsed
  • 1/2 cup (118 ml) plain yogurt
  • 1/4 tsp chipotle powder
  • 1/4 tsp smoked paprika
  • Whole wheat buns
  • Sliced tomatoes
  • Lettuce

Instructions

  1. Heat a large sauté pan over medium-high heat and drizzle with 2 tablespoons of olive oil. Add the mushrooms, sweet potato, garlic, scallions, and salt. Sauté for 5–7 minutes, or until the mushrooms begin to brown and the sweet potato is just cooked through. Add the spinach, cumin, and cayenne and continue sautéing until the spinach is wilted, about 2–3 minutes. Remove the pan from the heat.
  2. In a large bowl, add the black beans and mash with a potato masher until about 1/2 of the beans are smashed and the remaining beans are still whole. Add the sautéed vegetables to the beans and stir to combine. Form into 4 burgers and place on a platter.
  3. Heat the same sauté pan to medium-high heat and add the remaining 2 teaspoons of olive oil. Cook the burgers for 3–4 minutes per side, or until crispy and browned. Remove to a platter.
  4. In a small bowl, combine the yogurt, chipotle powder, and smoked paprika to make the Spicy Yogurt Sauce.
  5. Serve burgers on whole wheat buns with sliced tomatoes, lettuce, and a dollop of the Spicy Yogurt Sauce.

Notes

  • For extra moisture, add a tablespoon of water to the burger mixture if it seems too dry.
  • These burgers freeze well! Wrap cooked burgers individually and freeze for up to 3 months.
  • If you don’t have plain yogurt, substitute with an equal amount of sour cream or mayonnaise.

Frequently Asked Questions

Do I need to cook the sweet potato before mixing it into the burger patties?

Yes, the sweet potato needs to be cooked and mashed before combining with the black beans. Raw sweet potato will not soften enough during the short time the patties are on the heat.

How do I keep sweet potato and black bean burgers from falling apart?

Make sure the mashed sweet potato is not too wet, and drain and dry the black beans thoroughly before mashing. Adding a binder like an egg or a few tablespoons of flour helps the patties hold together on the skillet or grill.

Can these burgers be made ahead and frozen?

Yes, form the patties and freeze them in a single layer on a parchment-lined tray before transferring to a bag. Cook from frozen over medium heat, adding a few extra minutes per side.
