Siren Song, a cocktail inspired by the hypnotic melody of mermaids and classic Caribbean rum punches. Just like its name suggests, the cocktail is alluring and with every sip, becomes dangerously better.
I recently tried the Siren Song at the NYC Black Lagoon Pop-up, an immersive, creepy, and macabre experience that pays homage to the occult, bizarre, and horror. Like the sailors in the Caribbean I was entranced after seeing the cocktail and obsessed after my first sip. Created by the hospitality veterans and co-founders of Black Lagoon; Erin Hayes is a longtime Chicago barwoman, and Kelsey Ramage, a sommelier and bartender with experience in London. Their Siren Song features a harmonious blend of rum and rye. It’s then mixed with the tropical tastes of banana liquer and a dash of spiced bitters.
While Siren Song was my favorite, other great cocktails include Hex Appeal (Fords Gin, Honeydew Cordial, Vermouth Dry), Memento Mori (Mezcal Union, Coffee Liqueur, Blackstrap Rum) and Blood Lust (Non-Alcoholic: Giffard Sirop, Miso Falernum, Rooibos Tea). For those eager to enjoy a Halloween-themed cocktail experience, throughout October, the Black Lagoon pop-up will be available in several locations in the US, Canada, and Mexico. However, if you are unable to visit the pop-up, the co-founders have generously shared the recipe so you can recreate this cocktail at home.
Things to note before making the Siren Song.
- No oat orgeat on hand, no problem swap for oat milk or Amaretto liqueur
- What’s Saline? A mixture of salt water and baking soda.
- A touch of sherry adds depth, while lime juice and Caribbean bitters give it a zesty, bittersweet finish.
- The finishing touches? A sprinkle of nutmeg and a playful parasol, served in a whimsical mermaid mug, making this cocktail as enchanting as its namesake.
- Recipe calls for a Mermaid Mug, but a hurricane or any tall glass will work
- Optional to add garnishes.

Ingredients
- 0.75 oz Aged Rum
- 0.75 oz Lot 40 Rye ( rye whiskey)
- 0.5 oz Giffard Banane (Banana liqueur, also known as crème de banane)
- 0.5 oz Spiced Oat Orgeat ( swap for oat milk or Amaretto liqueur)
- 0.25 oz Lustau Amontillado Sherry ( sherry wine)
- 0.75 oz Lime Juice
- 2 Dash Bitter Queens Caribbean Bitters
- 2 Dash Saline (mixture of salt water and baking soda)
- Garnish: Nutmeg & Parasol
Instructions
- Add all ingredients into the shaker with ice and shake well.
- Then pour into the Mermaid Mug
- Top with fresh ice and then add the garnish.
