Because who wants to be sweating in the kitchen for too long when it’s this hot outside?! Oh, not I. I rather be barefoot and sun-kissed, relaxing by the pool. Ice-cold drink in hand and diving into one of these.

Description

Light and refreshing, this strawberry mousse is the perfect summer dessert. Easy to make and even easier to enjoy!


Ingredients

  • 1 cups (237 ml) whipping cream
  • 14 oz (400 g) fresh strawberries
  • 1/3 cups (65 g) sugar

Instructions

  1. Whip the whipping cream until very firm.
  2. Puree the strawberries (save 4 for garnish) with sugar.
  3. Pour some strawberry puree into four serving glasses.
  4. Add the remaining strawberry puree to the whipped cream and fold gently until combined.
  5. Fill the glasses with the strawberry mousse.
  6. Garnish with halved strawberries.
  7. Serve immediately or refrigerate for up to one day.

Notes

  • For a richer flavor, use high-quality, ripe strawberries.
  • If you don’t have whipping cream, you can substitute heavy cream, but the mousse will be slightly less light.
  • To prevent the mousse from becoming watery, make sure your strawberries are completely drained before pureeing.
