Pumpkin Sauce Spaghetti and Meatballs

Blend the Pumpkin Tomato Sauce

Combine 1 can of pumpkin puree, a 28-ounce can of crushed tomatoes, and 1 tablespoon of heavy cream in a blender. Puree until smooth and set aside while you cook the pasta and meatballs.

Sear the Meatballs with Onion and Spices

Boil the whole wheat capellini according to package directions and drain. In a high-rimmed skillet, heat roasted garlic olive oil over medium heat and cook the chopped white onion with crushed red pepper flakes and Italian seasoning for 5 to 7 minutes until translucent. Add the Italian sausage meatballs and sear, turning often, for about 3 minutes until the outsides are browned.

Simmer the Meatballs in the Pumpkin Sauce

Instructions

  1. In a blender, puree pumpkin, crushed tomatoes and heavy cream until smooth.
  2. Boil the capellini in a large pot until cooked to your liking (al dente or well done). Drain.
  3. Meanwhile, heat the olive oil in a high-rimmed skillet over medium heat. Add the onion, crushed red pepper and Italian seasoning and cook, stirring, for 5-7 minutes or until onion is translucent.
  4. Add the meatballs to the skillet and cook to sear the outsides, turning often, for 3 minutes or until outsides are browned.
  5. Pour pumpkin tomato puree into the skillet and increase the heat to medium-high to bring the mixture to a boil. Cook until meatballs are cooked through.
  6. Spoon meatball mixture over the pasta. Serve with parmesan and mozzarella on top.

  • Blend the pumpkin, tomatoes, and cream together before cooking — this keeps the sauce fully smooth with no simmering or tending needed.
