The perfect spring and summer sipper.
This drink was made for the summer.
See, I planned ahead this year. Sometime in the middle of spring, while walking through the local nursery, we passed by the the seed section. I looked at the seeds for watermelon, canteloupe, cucumber, … etc. and they all looked good. So like any backyard gardener I bought the seeds walked out to the back yard and tossed them into the beds with reckless abandon.
Fast forward two, maybe three months and what do you know? We have watermelon’s growing and again, like any other backyard gardener, when I see fruit growing up from the ground I think, “Hey, that would taste good with some Gin!”. So here it is, the Fruity Gin Fizz in all its glory.
Print- Yield: 2 drinks 1x
Ingredients
Scale
Watermelon Ice
- 1/3 of a small watermelon (pureed. Freeze in a savarin mold overnight or until frozen solid.)
Gin mixture
- 5–6 strawberries (halved)
- 1 oz simple syrup
- juice of 1 lime
- 3 oz good quality gin (we used Leopolds)
- 1 can club soda
Instructions
- Muddle strawberries with simple syrup. Pour into glasses. Using the back of a spoon, slowly pour 1 1/2 oz gin into each glass, over the strawberry mixture. You want to create a separation for each layer. Slowly add club soda, half of the lime juice, and top with a frozen watermelon ring. Garnish and sip slowly.
