Real talk, how are your 2018 food resolutions coming along? We’ve been trying to eat cleaner and cook more at home this year. Admittedly, we’ve fallen off the wagon a few (read: many) times, but this month has motivated us to hit the reset button and move forward with determination.

We love these grain bowls for keeping us on track no matter what month it is. Cook a large pot of grains on a day when you have time to kill. Make your dressing and store it in the fridge until you’re ready to eat. You can even roast your vegetables ahead of time. Feel free to switch up the veggies below based on what you like and what is in season. Once you’re all prepped out, you’re set for success.

Before you sit down to eat, poach or fry up an egg for extra protein. Plus, that soft yolk helps coat all the grains and vegetables and brings it all together.

Since it is National Nutrition Month, let’s talk egg nutrition. We used Eggland’s Best eggs to really give our nutrients a boost.
