Prosciutto and Roasted Tomato Salad

A simple salad can be beautiful and delicious and still be very easy. This salad is soo yum!! When winter tomatoes have less flavor, throw them in the oven. First, I roasted a handful of cherry tomatoes and a garlic clove. Cut the cherry tomatoes in halves, add a pinch of salt and pepper, drizzle some extra virgin olive oil on top, and bake at 300 degrees for about 15-20 mins. To assemble the salad, mix the roasted cherry tomatoes with some fresh ones, add slices of prosciutto and pecorino cheese. Again, season with salt, pepper, and some olive oil. That’s it!!

Ingredients
  • 1/2 Cup cherry tomatoes, roasted
  • 1/4 Cup fresh cherry tomatoes, optional
  • Prosciutto
  • Shaved pecorino cheese
  • salt, to taste
  • pepper, to taste
  • olive oil, to taste
Instructions
  1. Preheat oven to 300F.
  2. Cut the cherry tomatoes in half, add a pinch of salt and pepper, drizzle some extra virgin olive oil on top, and bake at 300 degrees for about 15-20 mins.
  3. To assemble the salad, mix the roasted cherry tomatoes with some fresh ones, add slices of prosciutto and pecorino cheese. Again, season with salt, pepper, and some olive oil. That’s it!!
