During a plated dinner you can expect a full-course meal that begins with options like Burrata salad served with grilled ciabatta and summer heirloom tomato. Following with a second course option such as chicken liver and foie gras mousse jar. Then savor a crispy local chicken breast with crispy confit garlic, thyme-white wine jus, smoked mushrooms, and celery root-potato puree for your main course. End your evening with a handmade cannelloni.
From May to October, you can indulge in a culinary experience at the “Supper Series” at the estate’s Pavillion where breakfast is also served. This culinary journey showcases the Hudson Valley’s bounty, from heirloom produce harvested from the chef’s garden to locally sourced ingredients from neighboring farms.
